Morning sunlight

I watched Gordon Ramsey's 14 year old daughter Matilda make her perfect hamburger on MasterChef - Junior.  I made the same for lunch today.  First she warmed up the skillet and the oven so both would be hot.  'Tilly used her thumb to make an indentation in the middle of the raw hamburger, filled it w/ Mozzarella cheese and covered it over w/ more meat.    I turned on my  stove top and oven too.  Cut a slab of medium Cheddar and set that aside. Mozzarella is OK but Cheddar melted on top looks better.  Tilly cooked her hamburger for two minutes on each side and then transferred it to the oven to finish off for five more minutes.  Her hamburger was quite pink on the inside when finished but I like mine a bit more done so extended my cooking times to get well-done.  While that was cooking Tilly covered the cap of a mushroom w/ basil pesto and put that in the oven to bake also.  Big mushrooms don't do a lot for me flavor wise so I cut off a cross-section of an onion and put that in the pan the hamburger patty had just vacated on top of the stove to caramelize it.   Tilly dressed greens w/ balsamic vinegar and finally assembled everything on a bun w/ aioli.  I didn't have balsamic vinegar and I'm not sure what aioli even is so put a dob of ranch dressing on the greens and ketchup on the burger.  Voila - the perfect hamburger (almost) exactly like Tilly Ramsey's!
