Bald Eagle
At Brent & Evelyn's wedding, they served Eggplant Parmesan. Last week Phil, Sheila, and I went to a farmer's market and there were three big eggplants for $2. Thought I'd try making the dish myself so I bought them. There is quite a bit of prep work - letting the cut-up pieces of eggplant dry out for two hours, breading each one in flour/egg/breadcrumbs and then browning them on a cookie sheet. Reducing the tomato mixture. Cutting up the cheeses. Only after that do you start to assemble the dish in order to bake it. However the work is worth it. The house smells divine and it's actually quite good. Should have started the process a little earlier though - 10 p.m. is a little late for me to eat supper.

Evelyn was glad to hear that you liked eggplant. It is a favorite of hers. She made a dish for me the other day of pork chops and eggplant. She used onion and olive oil too. It was pretty good.
